Time to Blow UP What You Know About Restaurants

During the pandemic, restaurants entered a period of intense uncertainty and near-collapse that forced them to rapidly adapt. In 2020 alone, the National Restaurant Association (NRA) reported that restaurant industry sales were down $240 billion from projected sales pre-pandemic and it wasn’t rare to see your local restaurants boarding up their doors. Restaurants responded to the pressures of staying afloat with an explosion of innovation–they weren’t afraid to test, learn, read, and react, becoming hyperresponsive to changing COVID-19 restrictions and consumer preferences in a struggle to keep their doors open.
Considering this unprecedented change, we wanted to know–what do consumers think? To answer this question, we surveyed 1,500 consumers, asking them what they want from their favorite restaurants in a post pandemic world.
